My friend Tina gave me this recipe and I have made it many times, always getting stupendous, flattering comments. People just love this chicken! And the best part is that it is so easy. It takes 2 minutes to make the marinade, then you put it in the fridge overnight and it goes straight from the fridge to the oven. Tada! It looks fancy and tastes very gourmet. People think you spent hours but you didn’t!
The honey cuts the ginger and the garlic so it’s not overpowering. My niece loved it. And it’s relatively healthy. Garlic is good for you. Ginger is good for you. Honey is not so bad – at least it’s natural. So go make it!
YOU WILL NEED:
6 chicken breasts, bone-in or 8 chicken thighs
1 cup soy sauce
1 cup honey
1/3 cup minced garlic
½ cup grated fresh ginger (don’t use powdered, it won’t be half as good)
Mix the soy sauce, honey, garlic and ginger in a small bowl. Microwave it for 30 seconds or more if the honey is thick and won’t mix well.
Put chicken in large baking dish so it is one layer and not overlapping.
Pour sauce over, cover with foil and refrigerate overnight.
Preheat oven 375
Put chicken in oven with foil still on it. Bake for 30 minutes.
Uncover pan, flip chicken and bake for 30 minutes more or until it is done!
