Hi cake lovers!

“Daddy’s great! Give us the chocolate cake!” – Who can forget the hilarious story from Bill Cosby of how happy his kids were when he gave them cake for breakfast? Cake is good. And chocolate cake is even better. And what’s even better than THAT is that this recipe is so easy, you don’t even need a mixer! With little effort in, you get out of it a rich, decadent, moist and beautiful cake.

1 3/4 cups brewed coffee (I like hazelnut flavored)

½ cup Spiced Rum

1 cup unsweetened cocoa powder (get the good stuff*) plus more for coating pan

2 sticks unsalted butter, cubed

2 cups sugar

1 ¼ tsp baking soda

½ tsp salt

½ tsp Baking Spice* or Cinnamon

2 large eggs

1 tsp vanilla



 Oven 325

Spray Bundt heavily with Pam Baking spray and then sprinkle 2 tsp cocoa powder and swirl pan to coat. Set aside.

Heat coffee, rum and cocoa powder on low heat in small saucepan. Add cubed butter and whisk until melted and smooth. Take off heat and whisk in sugar until dissolved. Put in large mixing bowl to cool. Set aside.

In small bowl, whisk flour, baking soda, Baking spice and salt. In another small bowl, whisk eggs and vanilla. Pour eggs into cooled chocolate mixture. Pour in flour mixture and whisk until combined well but do not whisk hard or overmix. The batter will be lumpy and thin.

Pour into bundt pan and bake for 40 minutes until toothpick in center comes out clean.

Cool for 1 hour and then turn out onto plate. Dust with powdered sugar if you like. Serve with whipped cream and strawberries.

Serves 8-10.
