What’s for dinner? Always the magic question. Sometimes it’s hard to muster the time and energy to cook. Well here I am to help with a SUPER easy and SUPER quick shrimp with snap pea recipe. Marinate it in the fridge and go from fridge to oven. Done!
This is also excellent for a large group! Just double, triple or quadruple the recipe! Not much more work and everyone loves it.

YOU WILL NEED:
1 alb large uncooked shrimp, peeled and deveined
1 bottle of Italian dressing – I use all natural kind
Juice of 1 lemon
1 tbsp. Sambal Oelek
1 bag of Sugar snap peas (you can use pea pods also)
1 stick of butter
1 box rice (I like Near East)
In large bowl, whisk dressing, lemon juice, sambal oelek and salt and pepper to taste. Add shrimp and snap peas and stir to coat well. Pour into rectangular baking pan. Cover with plastic wrap and marinate in fridge for at least 5 hours or overnight. Stir once or twice every few hours, but not necessary.
Remove pan from fridge. Melt one stick of butter on stovetop or in microwave. Pour over shrimp mixture. Stir to combine. Cover with foil and bake for 30 minutes. In the meantime, cook rice.
Serve over rice with some sauce. Easy Peasy!
