3 DAYS TILL XMAS LADIES!
I don’t know about you, but I have already indulged in sweets and I’m on a sugar high. I am trying to be good but it is so hard.
In between your chocolates, cakes and cookies, try to eat something healthy. This dish is easy and delicious.
YOU WILL NEED:
1 Salmon filet for 2 (about a pound)
½ cup Mayonnaise (I use the light mayo)
1 tbsp. horseradish
2 tbsp. chopped Dill (plus more for bed) – buy fresh DILL!
1 tbsp. Dijon mustard
1 tbsp. lemon juice
pepper to taste
5 cloves garlic chopped
Preheat oven to 250 – we will do the low and slow way – keeps salmon moist
Mix all ingredients in a bowl except for garlic and the rest of the dill – just use the 2 tbsp.
Spread on clean Salmon, skin side down.
Use the rest of the dill to make a bed on a baking sheet. Sprinkle garlic around.
Place salmon on top.
Bake for about 30-40 minutes until done to your liking.
(If you like a crispy skin, you can pan fry the salmon quickly just on the skin side and then follow the remaining steps above.)
