Hello!!!

Fall equals pumpkin mania! It seems every food product is adding pumpkin just to get in on the hype. I love pumpkin and I’m not letting the gimmicks upset my happy time. This is a very easy loaf bread that tastes like fall. It’s dense and moist and is perfect for brunch or with a soup or salad for lunch or dinner. And there is NO NEED to go and make your own pumpkin puree. COME ON! Even the best chefs use the canned stuff.

YOU WILL NEED:

½ cup chopped pitted dates

½ cup boiling water

1 tbsp butter

½ cup chopped fresh cranberries

2 cups flour

½ tsp salt

¼ tsp ground cloves

½ cup sugar

½ cup brown sugar

1 tsp baking soda

2 eggs

½ cup pumpkin puree

1 tsp vanilla

 

TO MAKE:

Oven 325

Spray loaf pan with Baking Pam

In small bowl, put dates and pour boiling water over to soften them. Add the butter so it melts. Set aside.

In mixing bowl, combine all dry ingredients. Add eggs, pumpkin puree and vanilla and mix well. Add cranberries and date/water/butter mixture.

Pour in loaf pan and bake for 1 hour. Cool, slice and serve!
