The cookie monster was a smart guy – what’s better than a cookie? Almost nothing. The chocolate chip version is a classic and this recipe makes the perfect one – perfect balance between crisp and soft, rich, buttery and satisfying.

YOU WILL NEED:
1 cup flour
¼ tsp baking powder
¼ tsp baking soda
½ tsp salt
1 stick unsalted butter, at room temp
2/3 cup sugar
1/3 cup brown sugar (packed tight)
1 large egg
1 tsp vanilla
½ tsp Rum Butter Flavor (I get mine at www.marketspice.com)
¼ tsp espresso powder
1 heaping cup chocolate chips (I like semi-sweet)
Oven at 375
In bowl, whisk together flour, baking powder, baking soda and salt. In mixer, cream together the butter and two sugars. Add egg. Add vanilla, rum butter and espresso powder, scraping down sides as needed.
Add flour mixture and mix just until combined. Add choc chips.
Drop cookie dough in heaping tablespoons onto baking sheets lined with Silpats or parchment paper. Press down to flatten cookies slightly with a damp palm.
Bake for 7 minutes and then switch trays around to rotate and bake 7 minutes more.
Cool and eat!
