Okay, so maybe that’s as close as I am going to get to Hawaii right now. I was there a few months ago and I miss it so! Such a paradise!

For all you Malihinis, I thought I would help get you in the summer tropical spirit with a recipe using pineapple.  This is so easy, healthy and delicious. Nice and light – perfect for a summer night! Here goes:


You will need:

1 pound fresh shrimp, peeled and cleaned

1 pound fresh pineapple – I get mine from Whole Foods, already pre-cut because I’m lazy

1 tsp. chili powder

1/2 tsp. grated fresh ginger

1 package pea pods

1/3 cup orange juice – fresh squeezed is best

1 healthy squeeze of Sirachi or chili sauce (about 1 tbsp. More if you like it really spicy!)


Puree in blender or Magic bullet:

about 6 chunks of pineapple

1/4 cup orange juice


1/2 tsp ginger

pepper and salt to taste

In skillet or large saute pan, melt 1 tbsp. butter and 1/8 cup orange juice over medium heat.

Add shrimp and cook for about 3 minutes and then flip over. Add pureed sauce and sprinkle with chili powder. Cook 3 minutes more.

Add pea pods and turn to high heat and cover. Shrimp should be ready in about 5-8 minutes.

I like to serve over Quinoa but you can do rice or couscous.

Serves 3-4 depending on appetite!
