1/3 cup warm water

3 tsp instant dry yeast

1/2 cup water

3 tbsp flour

1/4 cup olive oil

1/3 cup sugar

1/2 tbsp salt

4 eggs

3-4 cups flour

In medium bowl, mix warm water and yeast and put aside for 5 minutes. In a small microwavable bowl, whisk the 1/2 cup water with 3 tbsp flour. Microwave for 20 seconds. Whisk again. Repeat until the mixture is the consistency of pudding. In mixer with paddle attachment, combine oil, sugar and salt. Add 3 eggs mixing after each. Add yeast mixture and flour “pudding” mixture. Change to hook attachment and add flour, one cup at a time until the dough is still a bit sticky but doesn’t stick to the sides of the bowl.

Turn the dough out onto floured surface and knead just until combined. Put in large bowl greased with oil seam side down. Cover with towel or plastic wrap. Set aside in warm place for one hour. It will almost double in size.

Set oven at 375. Turn out dough onto floured surface and knead till smooth. Cut into 3 equal pieces. Roll each piece into long rope. All pieces should be equal length. Connect all 3 pieces at the top and braid together. Tuck ends underneath. Put on greased baking sheet and make an egg wash with an egg and a tbsp of water beaten. Brush bread with egg wash.

Bake 20 minutes and then repeat egg wash. Bake for an additional 10-20 minutes. The bread should be golden brown and spring back when you touch the top.

Let cool 15 minutes. Serve!
