Hi ladies!

I was inspired being in Vermont surrounded by all this delicious maple syrup! 

This is a delicious, easy recipe for a super rich and dense loaf that can be served for brunch or at lunch with a salad, or even as dessert heated up with some ice cream on top!


2 cups flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1 1/2 sticks butter, room temperature

3/4 cup sugar

3 eggs, beaten

1/4 cup pure maple syrup

2 cups over-ripe bananas, mashed (about 2 1/2 bananas)

juice and zest from 1 medium lemon

Preheat oven to 350. Spray loaf pan generously with Pam.

In bowl, whisk flour, baking powder, salt and cinnamon. Set aside.

In another bowl, cream butter and sugar together till whipped and smooth.

Add in eggs and maple syrup. Don’t over mix. Just blend.

Add in lemon juice and zest.

Fold wet ingredients into dry. Don’t overmix. Just mix until fully blended. 

(Add nuts if you want)

Pour into loaf pan. Bake 55-65 minutes until firm but not overbooked.
