Hello summer! It’s strawberry season so let’s eat it in my favorite form: cake! This is an easy and delicious recipe for chocolate cake with fresh strawberry frosting. This chocolate cake is light and fluffy and the frosting isn’t too sweet with that fresh strawberry flavor. And, of course the frosting is pink, my favorite color!

2 cups flour

2/3 cup unsweetened cocoa

½ tsp baking powder

1 tsp baking soda

1 tsp cinnamon

¼ tsp instant espresso powder

¼ tsp salt

3 eggs

1 2/3 cup packed brown sugar

2 tsp vanilla

1 cup mayonnaise

1 ¼ cup hot water

1/8 cup rum

Strawberry frosting:

1 pound fresh strawberries, tops removed and sliced

2 sticks room temp butter

3 cups powdered sugar (have more on hand just in case)

Pinch salt

½ tbsp Cointreau

1 tsp vanilla

1 9×13 pan


Oven 350

Spray pan with baking spray. Mix dry ingredients with a whish in bowl – flour through salt on ingredients salt. In mixer, beat eggs, sugar, rum and vanilla until creamy and smooth, about 3 minutes. Add mayo, mix. Add dry mixture to wet mixture at low speed, adding the hot water in between. Pour into pan. Bake at 350 for 30 minutes. Cool completely before frosting.


In blender or food processor, puree 1 ½ cups strawberries. Note: You may want to save some for decoration. With mixer, beat butter until smooth. Add Cointreau and vanilla and salt. Add 1 cup powdered sugar. Add about ¼ cup pureed strawberries. Mix, Add another cup of powdered sugar. Keep adding strawberry puree and powdered sugar until it’s the consistency and flavor you want.

Frost cake. Serve. Make people happy!

NOTE: The frosting must be stored in the fridge since it has fresh strawberries.
