Hi fellow cooks and food lovers!

2 cups ricotta cheese

4 eggs

4 tablespoons sugar

1 tablespoon flour

3 tablespoons limoncello

1 tablespoon fresh lemon juice

lemon zest from 1 lemon


Preheat oven to 350

Grease 9 inch round cake pan (I use Baking Pam spray)

Drain ricotta on a paper towel set in a strainer

With a mixer, whip the ricotta till smooth. 

Add eggs one at a time. 

Add sugar and flour. Scrape down sides of bowl.

Add limoncello, lemon juice and zest. 

Note: Batter will be very thin, like pancake batter.

Pour into pan. Bake 30-35 minutes until set and barely jiggly in the center.

Cool. Serve with Fresh berries and whipped cream. Garnish with mint.

Can be refrigerated and served chilled as well.
