Happy Sunday Ladies!

Are you still buying store-bought ice cream? Shame on you! With an ice cream maker (I like the one from Cuisinart), it is so easy and fun to make ice cream. Plus, it is less expensive when you make it at home and you can become a mad scientist and add anything you want!

This is a delicious lemony, sweet and tart, refreshing ice cream that you and your guests will love!

Here is the video:

 Roasted lemons

Ice cream maker

1 ½ cups of whole milk

1 cup sugar

3 cups heavy cream

1 tbsp. vanilla

pinch of salt

1/3 cup pureed roasted lemons**

About 8-10 fresh mint leaves

Zest of 1 lemon

Lemon juice to taste

In bowl, mix milk and sugar and whisk until sugar is dissolved. Add heavy cream, vanilla and salt. Add lemon juice to your liking (usually ½ lemon).

Turn on ice cream maker and pour in milk mixture. Let churn for 20 minutes.

Meanwhile, in food processor or blender, puree the roasted lemons and mint leaves. Do not puree all the way. You want some small chunks.

After 20 minutes, add lemon/mint mixture and lemon zest to ice cream. Taste and see if you want to add more fresh lemon juice.

Churn another 5 minutes. Put ice cream in freezer container and freeze for about 2 hours. Ice cream can be made days ahead!

Slice 2 lemons lengthwise and pop out any seeds. Place on baking sheet lined with parchment or silpat. Sprinkle sugar over them. Roast in 400 oven for about 8-10 minutes, until browned.
