Hooray for fall! I love pumpkin and all the spices that go into pumpkin desserts, don’t you? I’m always looking for new versions of the classic pumpkin pie. I messed around with some ingredients and came up with this delicious bar. It’s better than pumpkin pie in my opinion. Try it and let me know!

2 cups flour

1/3 cup sugar

3/4 cup butter, cubed and put in freezer

1/4 tsp salt

1/4 tsp pumpkin pie spice

1 cup caramels

2 tbsp unsalted butter

2 eggs

3/4 cup light corn syrup

1 1/3 cup pumpkin puree

1 1/2 tsp vanilla

1/2 tbsp pumpkin pie spice

1/4 tsp salt


Oven 350

Spray 9×13 pan with baking spray

Put flour, sugar, salt and spice into food processor. Blend. Add butter and pulse until it forms rough crumbs. Press into bottom of pan. Bake for 20 minutes.

While crust is baking…

Turn up oven to 400

Whisk together eggs, corn syrup, pumpkin, vanilla and spices. Melt caramels and butter in microwave for 20 second intervals till melted and creamy. Whisk into bowl with other ingredients. Pour into pan. Bake 25-30 minutes until set.

Cool and serve with ice cream or whipped cream.
