Hello Princesses who cook!

It’s chilly out, which makes me think of..well…chili! What better way to warm the heart and soul than with a big bowl of delicious chili! Chili is one of the easiest, most delicious things! But sometimes it can be fattening and heavy. I’m gonna cheat and lighten it up and add some veggies. You won’t even notice….

YOU WILL NEED:

1 pound ground turkey

Canola or vegetable oil

1 jalapeno, seeds removed and chopped fine

1 large onion diced

1 bell pepper, diced

4 cloves of garlic, minced

1 28-ounce can crushed tomatoes

1 15-ounce can black beans

1 15-ounce can kidney beans

1 6-ounce can tomato paste

1 7-ounce can chipotle peppers in Adobo sauce (you will only use a little)

½ package fresh spinach (2 ounces), chopped fine

2 tbsp chopped fresh cilantro

1 tsp cumin

1 tsp chili powder

1 tsp salt

Fixins – avocado, cilantro, sour cream, cheese

 

TO MAKE:

In a slow cooker or instant pot, put temp on low or “saute” and add oil to bottom and brown ground turkey. Add all other ingredients. Stir. Note: The chipotle peppers are very spicy so add a couple and taste before you add more.

Set on “chili/stew” setting or cook on low for 1 hour. Serve with all the fixins.
