Hello happy bakers!

Who has time for cake? Me, me, ME! Anytime is a good time for cake, especially for a party. This PINK cake – yes PINK! – is super sweet and pretty (depending on your decorating skills). If you like sweet like candy, this is for you! I love it for a kid’s birthday or Easter!

Ingredients:
2 cups sugar
1 cup butter, softened
2 eggs
1 tsp vanilla
1 tbsp fresh lemon juice plus zest of 1 lemon
2 1/2 cups cake flour
1/2 tsp baking soda
2 tbsp strawberry-flavored jello powder mix
1/4 tsp salt
1 cup buttermilk
6 oz fresh raspberries

FROSTING:
1 8 oz package cream cheese, softened
8 tbsp unsalted butter, softened
1 tbsp strawberry-flavored jello powder mix
1 tbsp lemon juice plus zest of 1 lemon
3-4 cups powdered sugar
pinch of salt
Garnish – raspberries, candied lemon slices or you can really go crazy and put candy on top!

NOTE: If you don’t want it really sweet, you can omit the strawberry jello.

MAKE:

Preheat oven to 350
Grease a 13×9 rectangular pan and line with parchment paper with it hanging over so it’s easy to lift cake out of pan.
Cream sugar and butter together in mixer until creamy, about 5 minutes. Add eggs on at a time. Beat well. Add vanilla, lemon juice and zest.

Meanwhile – sift dry ingredients together. Add flour mixture and buttermilk, alternating until well mixed.

Pour in pan and bake for 35-45 minutes until center is set.
While cake is cooling in pan, make frosting:

In mixer, cream together cream cheese and butter. Add jello powder. Add lemon juice and zest. Add pinch of salt. Add powdered sugar until desired consistency. Put in fridge and let set firmly.

When cake is completely cool, lift out of pan. it may seem really moist. It’s ok. It will dry out a little. Frost when it is cold and frosting is firm.
