HI Pink Lady Chefs!!
I LOVE bacon – who doesn’t?! And I love ham! So you would think I would love pork chops right? Not really. I have to say that I don’t really think of pork chops much when it comes to planning dinner. But how many times can you eat steak and chicken? I mean, sometimes you have to go for the other white meat. So, I got these and decided to make something good for me and the hubby. And you know what? It was DAMN good! Porkin’ A it’s good!
Here it is:
GRILLED PORK CHOPS WITH SPICY APPLE CHUTNEY
Ingredients:
2 pork chops (I got mine from Trader Joes’ and they were awesome!!!
Spice rub – any store bought kind will do. I like Fiorella’s Jack Stack rub. Hey, they know BBQ in Kansas!
1 medium onion – I like Vidalia but red onion would be good too – roughly chopped
2 medium apples – I like Gala but again, any will do! – diced medium
One preserved meyer lemon chopped – I get mine at Williams Sonoma. They have some heat to them. Yummy! Chopped fine
Chipotle chili powder
2-3 Tablespoons Cranberry Marmalade Preserves – you could also use Orange Marmalade or Lemon Marmalade
TO MAKE:
Lightly brush both sides of pork chops with olive oil and rub the rub all over each side. Set aside.
Make Chutney –
Melt one tablespoon butter in saucepan. Add onion and cook on medium until glossy and soft, about 10 minutes. Add apple. Cook for another 10 minutes. Add about 1 ½ tsp chili powder. More if you like it really hot. Stir for about a minute. Add chopped preserved lemon and marmalade. Stir for another 5 minutes on low heat.
You can put the pork chops on while you are making the marmalade. They will take about 15 minutes, about 7 or so on each side.
Let porkchops rest covered with foil for 5 minutes. This lets the juices seal into the meat.
Serve pork chops with chutney.
